Stir-fried Green Beans with Soy and Peanut Dressing

This is a really yummy side dish/snack, or one part of the 3-part Glorious Green Salad Trio (with Hoisin and Cucumber Salad, and Thai Green Rice).

The gloriously crunchy green beans and the chunky peanut butter are a perfect combination… mmmm…

Ingredients

  • 300g green beans
  • 2 tbsp crunchy peanut butter
  • 1 tbsp soy sauce
  • 1/2 tbsp rice vinegar
  • 1/2 tbsp brown sugar
  • oil for frying
  • 2 garlic cloves (finely chopped)
  • 2 tbsp sesame seeds

Method

  1. Cook beans in salted boiling water for 2 mins. Drain, and rinse in cold water.
  2. In a bowl, mix together peanut butter, sugar, vinegar and soy sauce. Add a few tablespoons of hot water if the mixture is too thick, and stir until the sugar has dissolved. Add sesame seeds.
  3. In a wok (or frying pan if you don’t have a wok), heat oil, add garlic and cook for about a minute (until golden). Then, add the beans and cook for 2-3 mins (until starting to blister slightly on the outside).
  4. Lower the heat, add the dressing and stir well.
  5. Transfer the beans o a serving bowl, and enjoy!
